A short, chunky pasta shape with ruffled edges that increase the surface area for holding sauce, made by Capparelli at the Mill here in Northern Ireland using 100% Italian durum wheat semolina. Capparelli was founded in 2021 by Carlos Capparelli, who previously worked with Yotam Ottolenghi, and the pasta has since been recognised at Blas na hEireann and the Great Taste Awards. The wheat is sourced through the Prime Terre project, from regions including Puglia, Tuscany, Sicily and Campania, then shaped through traditional bronze dies and slow dried at a maximum of 38 degrees for 24 to 30 hours. 500g.
