Ispini Bresaola - Rosemary and Thyme Air Dried Beef

Using the salmon cut of local Northern Irish beef, Ispini dry-cures the muscle with black pepper, rosemary, thyme and juniper berries before slowly air-drying it in the maturing room for several weeks. The texture is firm but supple and the colour a deep, rich red, with a flavour to match. The Great Taste judges commented that it was very nicely cured and full of flavour, with excellent texture and delicate, complementary flavours. Sliced and vacuum packed, ready to serve. Minimum weight 50g,
